Tiu Bainzu is a sheep’s cheese with a maturation period of 60/90 days.
With a delicate flavour.
The semi-hard texture becomes compact and grainy as it matures.
The delicate and sweet flavour becomes more intense with the ageing process.
The compact texture is white in the young cheese and straw yellow at the end of maturation.
